Pullulanse is obtained by deep fermentation from Bacillus Licheniformis. Glucoamylase hydrolyze terminal 1,4-linkedalpha-D-glucose residues successively from non-reducing ends of amylase chains to release free glucose.This fermentation also possesses the ability to hydrolyze alpha-1,6-glucosidic linkage in isomaltose and dextrins. Pullulanaseis the thermal stable debranchinng enzyme at low PH(starch alpha-1,6-glucosidase0 It hydrolyzes the alpha-1,6-glucosidic linkage and effectively affect on branched chain starch and work in glucoamylase.
